I learned this recipe from my Auntie Annie. I have no idea where she learned it (she was not known as a good cook at the time) I think she said someone shared it with her because it was easy. And it really is the easiest chicken salad ever. She made it for a bridal shower for her sister, my Auntie Mars. Auntie Mars is how we affectionately refer to Aunt Mary-Jo. And it’s pronounced like the ‘Mar’ in Mary, not like the planet.
So, the shower was smallish and sweet in Annie’s home and the Chicken Salad was served on mini croissants as I recall. Elegant finger sandwiches for a shower. But I was really blown away by the list of ingredients. There are only 5! See, I told you it’s the Easiest Chicken Salad Ever!!
You can use fresh or frozen chicken, (I use boneless, skinless breasts). You can boil, poach, broil, bake or microwave your chicken (the Deep Covered Baker is perfect for this in the microwave). I sprinkle some of the Rub (see ingredient list) on the chicken before cooking just to give it some flavor. Once cooked, dice the meat into small dice. Chopping or dicing your chicken into very small pieces makes a finer overall salad texture and you will be able to spread on a cracker (casual) or use those mini croissants for your bridal shower or other elegant event. When it’s just us and I serve this for dinner, I use the Salad Chopper to cut up the chicken.
So, here’s the ingredient list:
Celery (chopped in similar size pieces to chicken)
Mayonnaise (I use the “Southern” brand which has no sugar)
That’s it! That’s all you need for this yummy salad. Can you believe it?
I don’t have quantities (sorry, this is how I cook) so to give you a rough idea, when I make this for a meal, I use one chicken breast per person, about 2 medium stalks of celery per person and about 3 green onions per person. Then mayonnaise to the texture you like. Add a big dollop, stir it up, see what you think. If you like it creamier, add more mayo. Then the Lemon Pepper Rub to your taste. Same idea as with the mayonnaise, start with a little and add until it’s the flavor you want.
There you have it. The easiest chicken salad ever. I know you can make this and proudly serve it to your family, your guests, your party people. You will blow their minds with how delicious this is and they will be asking for the recipe. You can just grin and share it, or not. You decide. It can be our little secret.
- Chicken breasts, diced
- Celery, chopped
- Green Onions, sliced thin
- Pampered Chef Lemon Pepper Rub
- Combine chicken, celery and green onions in quantities to suit your taste. Stir in enough mayonnaise to moisten. Add mayonnaise again, to your taste. I add enough to make the salad spreadable if serving on bread, crackers or croissants. Add Lemon Pepper Rub to taste. Serve and enjoy.
- This recipe is best served cold. Refrigerate after mixing. Taste again once salad is chilled.
